"The desire to create is one of the deepest yearnings of the human soul. No matter our talents, education, backgrounds or abilities, we each have an inherent wish to create something that did not exist before. Everyone can create. You don’t need money, position, or influence in order to create something of substance or beauty. You might say, I am not the creative type. If that is how you feel, think again. Creation is your opportunity in this life….. Start small. Creativity does not require a brush, a pen, or the keys of a piano. Don’t let the voice of critics paralyze you. You will make the World a better place. Improve, beautify, extend, smile, cultivate, develop, create."

Spelt is the winner!

I have been experimenting with different flours trying to find a good texture for some of our favorite foods that called for white flour, which we are trying not to eat anymore. I've tried German 'Popeye' Pancakes with whole wheat flour, and they weren't horrible at all, just not as light and didn't 'pop' as much. Well, we had breakfast for dinner and I tried spelt flour, and they were Great! These are very delicious. I promise you'll love them.

German 'Popeye' Pancakes

6 eggs, preferably cage free and organic
1 cup whole milk, preferably organic
1 cup whole spelt flour (I ground it myself)
1/2 tsp salt
2 Tbl butter, melted

Mix first four ingredients, eggs, milk, flour, and salt, in a blender until smooth. Melt butter in bottom of 9x13 pan. Pour batter into the pan. Bake uncovered at 400* for 20 minutes. Top with pure maple syrup, applesauce, or your favorite fresh berries.
